Martinican cuisine counts numerous gravy dishes, with spicy flavors and sometimes sweet and sour. This is the case of the coconut chicken, one of the most emblematic dishes of Martinique.
Coconut chicken is a creamy dish consisting of a whole chicken (cut into pieces), 400ml of coconut milk (canned), a lime, a teaspoon of turmeric, two pinches of curry, two teaspoon of cumin, 4 crushed garlic cloves, 3 sliced onions, 3 chopped tomatoes, a little saffron, a little olive oil, salt and pepper.
Coconut chicken is easy to prepare but the preparation can be a bit long because it must let the chicken marinate in the sauce. It is served with white rice and you can add vegetarian chili (call “paprika”).
